Techniques to know for stuffing donuts
La Chandeleur and Mardi Gras are fast approaching, and with them the delicious Carnival donuts. They can be eaten simply sweetened or, for those with a sweet tooth, filled!
Whether filled with jam or spread, the technique remains the same. For stuff the donutswithout risk of missing them, we will advise you to carry out this step after cooking.
Once the donuts are cooked, take a pastry bag with a notched tip, make a hole in your donut and fill it with the filling of your choice. If you don’t know how to use a piping bag, you can also use a kitchen syringe.

Our tips for stuffing donuts before baking
Do you know the Berlin ball? Also called Berliner, this funny name designates a donut of Austro-German origin filled, before cooking, with marmalade or jam then generally glazed with sugar. For stuff donuts before baking, there is a trick! First, roll out your donut dough on a lightly floured surface and cut out discs one centimeter thick (not too thick, otherwise the dough won’t have time to bake and you’ll end up with raw donuts). Place a teaspoon of the filling of your choice in the center of your disk, wet the edge of the latter and place a second disk on the first. Do not hesitate to press the two discs well so that they stick well together. Then let rise to allow them to weld together. Then move on to cooking your donuts!

Stuffing donuts: the art of folding
If the double disc technique does not work for you, you can always fold your donuts like the Asian bao. Flour the work surface and roll out several balls of dough, taking care to have the center of the dough thicker than the edges. Place a spoonful of filling in the center of your discs then fold. Grasp one edge of dough with thumb and forefinger, forming a crease. Repeat this action to form only folds and obtain a round ball. Make sure that the folds are well welded together.
