What exactly is raindrop cake?

Raindrop cake (or mizu shingen mochi in Japanese) is a dessert made from mineral water and agar that looks like a giant raindrop. It is really impressive as you can see in the photo above.

What is also interesting is that it begins to evaporate after twenty minutes, so it must be eaten immediately. It literally melts when it enters your mouth.
And believe it or not, this dessert contains zero calories! So what makes it a dessert, you might ask?! It is usually served with brown sugar syrup and soy flour which gives it its taste and texture. So, here is how to prepare the “raindrop cake”.



Ingredients :

  • 10g agar powder
  • 300g mineral water
  • 4 tablespoons soy powder (kinako)
  • 4 tablespoons brown sugar syrup (kuromitsu)

Preparation :

  1. Start by putting the agar powder in a small saucepan.
  2. Add a little water at a time to the pan to avoid making lumps. Stir constantly to dissolve the powder.
  3. Then bring to the boil and simmer for 2 minutes, stirring constantly.
  4. Transfer the pan to a sink or large container filled with cold water and continue to stir so that the mixture cools quickly.
  5. Pour into a spherical drop-shaped silicone mold and fill it halfway.
  6. Leave in the refrigerator for at least 1 hour.
  7. When the mixture has set, unmold and serve with 1 tablespoon of soy powder and 1 tablespoon of brown sugar syrup. You can also experiment with maple syrup, nuts, cookies, and whatever else you like. If you want to skip the calories altogether, try making sugar-free quince jam.
