Cyril Lignac reveals his recipe for soft and crispy bugnes
This March 1st is Mardi Gras! The perfect opportunity to enjoy good sweet treats. According to tradition on this carnival day, we generally enjoy small donuts, pancakes, waffles… and other cakes. Cyril Lignac has for the occasion unveiled his recipe for delicious soft and crispy bugnes – also called auricles.

Cyril Lignac’s recipe for soft bugnes
Ingredients for 4 persons :
- 500g flour
- 2 tablespoons of sugar
- 1 half packet of yeast
- 4 eggs
- 125g melted butter
- a spoonful of orange blossom water
- zest of a lemon
- vegetable oil
- icing sugar
In a bowl, pour the flour and form a small well. Add the sugar and yeast to it.
Mix the dry ingredients well.
Add the eggs one at a time, mixing as you go.
Add the butter, melted beforehand. Then orange blossom water and lemon zest.
Add a little water to the dough, and knead it until it forms a ball that does not stick.
Let stand for 10 minutes.
Sprinkle the ball with flour and roll it out.
Using a serrated knife, cut out diamond-shaped pieces.
Heat the oil (190º) and dip the diamonds in it. Turn them after a few seconds so that they are golden brown.
Drain them then place them on absorbent paper.
Sprinkle them in icing sugar and enjoy!
