The recipe for churros from Roxane’s workshop

Ingredients
for 25 churros

  • 250g of water
  • 30g neutral oil
  • 25g sugar
  • 2g of salt
  • 245g flour
  • 3 eggs

For cooking : A pan of oil or a fryer.

Start by putting the water, oil, sugar and salt in a saucepan. Bring everything to a boil.

Off the heat, add the 245 g of flour. Mix by hand using a spatula.

Put your pan on a low heat and dry the dough for 3 minutes.

Put your dough in the bowl of your robot and work it using the robot sheet. You can also work it using a spatula in a salad bowl.

Pour in 3 beaten eggs in three times, beating for 2 minutes between each addition.

Once the dough is ready, put it in a piping bag with a fluted tip (this will give the characteristic features to the churros). You can also use a device specially designed to make churros.

Heat your oil or turn on your deep fryer to 180 degrees. Do not go higher because the oil degrades the food after 200 degrees.

Warning ! Hot oil should be handled with great care. Splashes can cause severe burns. Do not handle in the presence of children and remember to place your fryer on a solid base (work surface for example). One banishes the chair or the stool, under risk of an accident.

Place your piping bag over the hot oil, and using scissors, cut pieces of dough about 15 cm long. Watch out for splashes.

Cook for 2 minutes on each side.

Collect the churros using a slotted spoon.

Place them on absorbent paper and roll them in sugar!
