Party and dress up for Mardi Gras
Before this period of deprivation, it was customary to party, dress up and eat “fat”. As the party brought together a large number of people, it was necessary to make pastries in large quantities, at a lower cost. The ideal opportunity to use up the reserves of butter, oil and eggs, before the 40 days of fasting that were to follow. Hence the tradition of donuts, waffles and pancakes…
