To make this recipe you will need the following ingredients:
1 poultry carcass (chicken or duck), 2 carrots, 2 onions (large size), 1 leek, 1 turnip, a stalk of celery, a bouquet garni (with chives, parsley, thyme, rosemary, bay leaf, tarragon…) salt and pepper (a pinch of each). For meat stock cubes, replace the carcass with pieces of beef or lamb.
