The recipe for Korean donuts (kkwabaegi)
Ingredients
for 16 donuts
- 290g flour
- 30g butter
- 75g white sugar
- 24 cl of milk
- 1 egg
- 7 g of baker’s yeast
- 2 pinches of salt
- 1 teaspoon of cinnamon
- Powdered sugar
- Frying oil (preferably corn)
Cooking utensil : a pan or a fryer
In a salad bowl, start by mixing the milk, the melted butter, the yeast, the 2 pinches of salt and the white sugar. Once this preparation is well mixed, add the egg. Mix again.
Pour all the preparation into the 290 g of flour. Mix with a spatula then leave to rest, covering the container, until the dough doubles in volume (minimum one hour).
Knead the dough again to remove the bubbles. Leave to rest again until the dough doubles in size (about 45 min).
Flour your work surface then divide the dough into 16 pieces. Take a piece, roll it so that it takes the shape of a cylinder then roll again with the hands going forwards with one and backwards with the other in order to twist everything.
Take the cylinder and join its two ends, normally the twist is done by itself. Repeat for the other pieces. To have the perfect helping hand, watch carefully the gestures performed in our video (0.37 seconds).
Let the twists rest for 30 minutes.
Meanwhile, heat your oil over medium heat or turn on your fryer. The temperature should be 180 degrees.
Watch out for oil splashes. Stay safe.
Put the donuts in the oil and cook them for about 5 minutes until they take on a golden-brown color. Drain them on absorbent paper.
Prepare a mixture with powdered sugar (quantity of your choice) and cinnamon in a bag (preferably paper), put donuts in it and shake until they are coated with the mixture.
Taste!
