Mardi Gras Angel Wings

250g of flour4 tbsp whipping cream1 tbsp lemon juice4 egg yolks1 tsp baking powder45g of butter1 sachet of vanilla sugarIcing sugar1 pinch of saltFrying oil

In a bowl, mix the whipping cream with the tablespoon of lemon juice.
In a bowl, place the flour with the vanilla sugar, baking powder and 1 pinch of salt, mix. Dig in the center. Add the cream, the previously beaten egg yolks and the soft butter cut into pieces. Start mixing with a wooden spoon then work the dough with your hands until you obtain a homogeneous preparation. Cover and chill for 1 hour.
Roll out the dough on a floured work surface as thinly as possible. Cut out diamond shapes and make a slit in the center. Pass each end of the diamond through the slot.
Heat a frying pan to 180°C. Gently place the angel wings in the frying pan and cook for 2 minutes, taking care to turn them once during cooking. Place on absorbent paper for a few moments then place on the serving plate. Sprinkle with icing sugar when serving.
Advice :
This traditional recipe is normally made with sour cream, whipping cream and lemon juice can be substituted if you have difficulty finding it.
